Homemade rice shavige, a very popular dish in the coastal region of Karnataka. Homemade ottu shavige is served with Coconut milk with cardamom, Valval, or Majjige huli. Chitrana is also prepared with the shavige/shemege.

The dish is called by many names, iddiyapam, shemege, shavige, ottu shemege, rice noodles and so on based on the region it's prepared.
The preparation method remains the same.

Rinse 3 cups of regular rice and drain the water completely. Soak the rice with 3 cups of water for 4 hours. Don't discard the soaked water. We need to grind rice with this water.

In a mixer, grind the soaked rice along with 3 cups of soaked water.
Grind to a fine paste. Don't add any extra water while grinding.

Add 3 tbsp of coconut oil to a heavy bottom large pan.

Transfer the batter to the pan & add salt as per taste.

On a medium flame, keep stirring the mixture constantly,
If you don't have a large pan, you can cook it twice.

Keep stirring until the batter becomes thick dough, use two spatula to stir the mixture. Cook for about 20 mins on medium flame, or till it becomes a thick dough.

Prepare small balls from the dough when it is still warm (You can dip your palm in water and make balls).

The next step is to steam the balls prepared above, we can use the idli steamer, place all the balls and steam them for 35-45 mins on high flame.

Take out 4-5 balls from the steamer, let the rest be there itself. Lower the flame till you finish pressing all the balls,
Note - the steamed balls will get harder when cooled and difficult to press on the noodle maker.

Ready the noodle maker, (shavige/shemege mane). You can also use the shamige mould in the murukku press for pressing shamige.

Grease the noodle maker with oil. Insert the balls into the shavige mane, make sure you just fill it till 75% of the bottom cup.

When the shamige is dropping, keep turning the plate, so that the shavige is placed uniformly.

Transfer it to a larger plate.
Ottu shavige is ready to be served with Coconut milk with cardamom, Valval, or Majjige huli!!

You can also have shamige with mango pickle & coconut oil.
