Curry leaves rice, also know as karibevu chitrana, is a quick breakfast or lunch/dinner dish, easy to prepare.
Curry leaves can be used for weight loss & for hair growth. They are rich in Vitamin A, B, C and B2. Curry leaves are also said to be good sources of iron and calcium.

 4 cups Cooked Rice
Curry Leaves
 2 tbsp Oil
 5 cups Curry leaves
 7 Green chilliesdepending upon the spicy required
Tempering - 1
 1 tbsp Jeera
 1 tsp Hing
Tempering - 2
 Oil
 1 tsp Mustard seeds
 ¼ cup Groundnutsquantity as per your preference
 1 tsp Urad dal
 1 tsp Channa Dal
For Grinding
 1 cup Coconut
 SaltAs per taste

Cook rice in a cooker or vessel and keep it aside for cooling. We would require 4 cups of cooked rice.

Dry fry 1 tbsp jeera and 1 tsp hing until the jeera turns slightly dark and you can smell the aroma of jeera & hing.

In a pan, add 2 tbsp of oil, and then add the curry leaves & Chillies. In a medium flame, keep frying the curry leaves till it is dried. The curry leaves will take about 8-10 mins to completely dry, keep stirring the leaves so that drying is done evenly.

Keep aside the curry leaves to cool.

Grind the mixture

Then in a mixer, add the cooled curry leaves, jeera hing mixture along with the grated coconut, do not add water, dry run the mixture.

Partially grind the mixture.

Now in a pan add 2 tbsp of oil, and ground nuts and let it fry for 2 mins, then add mustard seeds, urad dal, channa dal. Fry them until golden brown in the medium flame.

Once it's done, mix rice with the coconut-curry leaves mixture, add the tempering-2 to this, mix it properly and then add salt as per taste.

Mix it thoroughly.

Karibevu Rice is ready to serve.
