Ridge gourd dosa is a classic Udupi dosa, also know as Uppu puli dosa is a spicy dosa. The batter is prepared with dosa rice, coconut, and other masala ingredients. Easy to prepare and a very tasty breakfast dish. The dosa is served with either butter, ghee, or jaggery.

Soak 2 cups dosa rice along with 2 tbsp of urad dal, 2 tbsp of channa dal, and 1/2 tsp methi seeds overnight [you can rinse the rice and then keep it for soaking].

Drain the water from the soaked rice the next day, if required rinse the soaked rice again. Then add 5 tbsp Dhaniya seeds, 1 tbsp Jeera, 3 tbsp jaggery, tamarind, 1 tbsp turmeric powder, 14 red chillies (add more if you like spicy), and salt to taste.

Add 2 cups of grated coconut.

Grind the above mixture to a fine batter using water. Check the consistency of the batter, it shouldn't be too thin nor too thick. (like a normal dosa batter)

Peel the skin of the ridge gourd and cut it into slices as shown.

Dip the slices in the batter, let it completely immerse.

In a dosa pan, grease with oil and place the ridge gourd. Add additional oil once you have placed the ridge gourd.
Cook on both sides, you can cover the dosa pan with the lid, so that it is cooked fast.

Crispy ridge gourd dosa (heerekai dosa) is ready.
Enjoy with butter, ghee, or jaggery.
